One problem I have with many cookbooks is that you can't see exactly what a recipe is supposed to look like as you go. When you start working with more complicated frozen desserts, being able to see the texture or color the food should be can be super helpful. Plus, like many people, I am more of a visual learner and find images incredibly helpful.
For example, if you want to make an ice cream bombe, you can read the directions many places. But why not use directions that have step-by-step photographs? If a recipe seems over your head, clear photographs can make it simple. Making your own frozen desserts isn't complicated, you just need to practice.
When I try something new, I always look for videos and photographs. There are many great instructional videos from all the guides here at About.com. The next time you are nervous about trying a new recipe, look for one to give you more confidence!
