Turkish-style Romano beans in olive oil are served cold and make a terrific side dish, salad or decorative buffet platter.

This dish is a great example of how many Turkish cold vegetable dishes are prepared. Vegetables, tomato and spices are simmered or pressure cooked in their own juices until very tender, then drizzled with olive oil before serving and storing.
The olive oil helps to preserve the dish so it lasts several days in the refrigerator. In Turkish, this whole group of vegetables dishes are, in fact, called "zeytinyaglilar." In Turkish, it means "those foods prepared with olive oil."
