Watermelon Sorbet

Sometimes when it's 25 degrees outside, it's hard not to think of summertime. I'm a warm weather girl, and the freezing temperatures can get me down sometimes. But, before you turn around it will be summer! I managed to find some decent watermelon at the store and decided to celebrate one of my favorite flavors of summer. Although it wasn't quite as ripe and sweet as it will be in a few months, it made some great frozen desserts.

At the top of the list is watermelon sorbet. Refreshing and light, this is a dessert you can feel good about. Sorbet is one of the simplest frozen desserts to put together, so a recipe like this is a great way to try out your ice cream freezer for the first time.

Next I made watermelon popsicles. I love making my own popsicles because they have plenty of fresh fruit in every one, but they taste every bit as good as the store-bought varieties (I think even better). You can even cut back on the sugar in them when your watermelon is perfectly ripe.

The third frozen dessert I made with my watermelon was watermelon granita, an Italian shaved ice dessert. This is another easy one to put together, and another recipe where you can cut back on the sugar as much as you like. Just taste the watermelon puree and add as much or as little as necessary. It will freeze perfectly even if you just use watermelon and a bit of citrus juice!
