I think I have moved on to a new food obsession. For the next few months, you might see a major uptick in semifreddo recipes. I'm obsessed with the idea of this simple frozen dessert that has a texture similar to ice cream, but with no ice cream maker needed.

What is a semifreddo? It is an Italian dessert that means "half-frozen," and is like a frozen mousse. It uses a custard base mixed with whipped cream and then frozen to create it's texture. Check out the expanded definition. This is one of those desserts that will completely impress your guests, but you only need a few simple techniques to make them. Can you whip cream or use a spatula to fold two foods together? That's all you need to make a perfect semifreddo.

I have been busy checking out tons of great semifreddo recipes online, like this lemon blueberry version. This has given me tons of great ideas for creating my own recipes. You will see a couple of them later this month, starting with a raspberry chocolate chip version that I am perfecting as we speak.
