I picked up some super yummy strawberries that were just starting to hit "too ripe" and look a little less than perfect. That stage makes them perfect to blend up and use for strawberry desserts. Today, I made a great strawberry semifreddo that I can't stop eating. It's got a great strawberries & cream flavor and a bit of an icy texture. It's so yummy.

With a very similar set of ingredients, and an ice cream freezer, you can put together a basic strawberry ice cream that is creamy and delicious. Don't worry if your strawberries are a day past their prime. It's like having overripe bananas - you just need to find the perfect recipe to make use of the fruit before it goes bad.
