Are you looking for an easy Turkish side dish or teatime snack that you can whip up quickly on busy days or when surprise guests pop in? If you have frozen puff pastry and some Feta cheese on hand, white cheese triangle pastries are the perfect solution.

These easy pastries take minutes to prepare and they look as pretty as they taste. Their lightness and crunchy texture go especially well with stews and other juicy dishes like Turkish spinach, beef and tomato stew. I always pop a trayful in the oven while my other food is cooking.

You can also experiment with fillings to make a whole array of triangle pastries. Here's an opportunity to get really creative. To give you a head start, some of the most common fillings used in Turkey are:

  • Sauteed onion and ground beef with spices
  • Mashed eggplant
  • Mashed potato
  • Sauteed spinach and onions

I also use chicken, mixed vegetables and mixed cheeses and herbs. Leftovers also work great!
