If you're like me, you're constantly searching for new ways to present healthy foods to your family. If you want to give them all the nutritional benefits of eating bulgur wheat, try this recipe for bulgur and vegetable pilaf.

This traditional Turkish side dish made with coarse bulgur is prepared with onion, tomato and green pepper and cooked with stock. The bold flavors of the vegetables blend perfectly with the earthy, nutty taste of the bulgur and give it a lovely, tender texture.

Try this dish in place of white rice to go with your favorite grilled meat and chicken dishes.

In Turkey, bulgur is a staple, and eaten almost every day. This dish is most often served with grilled meats, or "kebabs".

Turkish people also like to eat bulgur pilaf with a scoop or two of plain yogurt. The combination of hot pilaf and cold, creamy yogurt makes a great combination.

You can also spice up your pilaf by using hot peppers or a small spoon of pepper paste in the broth. Garnish it with a few pieces of fresh peppers and tomatoes and you have a side dish your family and friends will love.
