If you're a vegetarian or vegan, or you simply love foods made with fresh, local vegetables, Turkey is the right place for you. Turkish cuisine is famous for it's vegetable dishes braised in their own juices then generously drizzled with high quality olive oil.

These dishes are called "zeytinyaglilar" (zay-TIN'-yah-LUH-lar), and are particularly cherished by Turkish people. They are served at nearly every meal, or eaten on their own for a light lunch or snack.
